Hi, my name is Heidi.  I’m a mom of 2 from Pennsylvania and am trying to win my fight against Lyme Disease and get back some control over my body!

I decided to start this blog as a way to “diary” my experiences as I dive into the gluten- (wheat) free way of eating.  After my digestive system was ravaged by Lyme and the flushing of bacteria from my body, I discovered, by way of my holistic nurse, that the probability of gluten/wheat intolerance being the cause of my lingering, and very troublesome, symptoms was very high.  She has actually been telling me to do this for almost a year, but with all of the other complications was still dealing with, I just wasn’t in a place where I could do the research, spend the time, and commit to the changes.  Now, I am, and I’m determined!  I am currently on day 4 of my Wheat-Free Diet (WFD) and I am noticing changes in how my body is functioning.  I plan to post what I eat and how my body reacts, and review recipes that I experiment with and foods that I eat.  I hope that someone else will benefit from my research and trials as well!
